Many modifies plural countable nouns; much modifies uncountable nouns. A lot of works with both, especially in everyday positive statements.
Check whether the noun can be counted before choosing much or many. A lot of is common with both types in everyday positive sentences. Much is especially natural in questions and negatives; too much and so much are also ordinary positive combinations.
